Sub-Zero fridge and freezer settings, and the safety line
The recommended settings on an electronic control panel are 38 F for the fresh food compartment and 0 F for the freezer. Sub-Zero also draws a safety line that is worth knowing independently of any fault: storing food above 45 F is not safe.
That 45 F line and the 48 F recovery threshold are different numbers doing different jobs. 45 F is about the food; 48 F is the point beyond which Sub-Zero says the cabinet will not come back from a condenser clean alone.

Sub-Zero CL, DET and DEC ranges
On Classic CL and Designer DET and DEC cabinets the refrigerator adjusts between 34 and 42 F, and the freezer between -5 and 5 F. If your cabinet will not go as low as you expect, check which range it is actually built to before assuming a fault.
Sub-Zero Classic BI and Designer IT, IC and ID ranges
Classic BI cabinets and the Designer IT, IC and ID models adjust between 34 and 45 F on the refrigerator side, with the same -5 to 5 F freezer range. The wider top end is why a BI cabinet can legitimately be set somewhere a CL cabinet cannot.
Sub-Zero wine storage and the 427R drawers
Wine storage models run 39 to 65 F, and Sub-Zero states that red and white wines can be stored in either zone. The 427R refrigerator drawers are the exception in this family, running 34 to 45 F like a refrigerator rather than like wine storage.
Why a Sub-Zero cabinet takes a day to respond
Sub-Zero asks you to allow 24 hours for a unit to reach a new temperature setting after an adjustment. That interval is the single most useful thing on this page, because most reports of a cabinet not responding are taken within an hour of changing it.
The same 24 hours applies after cleaning a coil, after a defrost, and after a power interruption. If a cabinet is still out of range a full day later, that is the point at which a reading means something and is worth telling us about.
